Pumpkin Cranberry Walnut Cake

Ingredients:
  • 1  bag LollipopTree® Pumpkin Bread Mix
  • ¼  cup  cornmeal
  • 2  eggs
  • ½  cup  water
  • ½  cup  sour cream
  • ½  cup  vegetable oil
  • 1 ½  cups dried cranberries
  • 1  cup  chopped walnuts, toasted
  • 3  tablespoons raw sugar
  •   Sweetened whipped cream
Directions:
Preheat oven to 350°F. Grease and flour a 9x9-inch baking pan. In a mixing bowl, stir Pumpkin Bread Mix, cornmeal, cranberries and ¾ cup walnuts together. In a separate bowl, whisk eggs, sour cream, oil and water. Add egg mixture to pumpkin mixture. Mix until incorporated. Pour batter into prepared pan and spread evenly. Sprinkle top with remaining walnuts and raw sugar. Bake for 35 minutes or until done. Cool on wire rack. Cut into squares. Serve with sweetened whipped cream. Serves 12.
