Granny Smith apples, peeled, cored and thinly sliced

Directions:
Preheat oven to 450°F. Lightly butter an 8-inch soufflé dish. In a small bowl, toss apples with lemon juice. Place in prepared soufflé dish. In a separate bowl, mix cinnamon and brown sugar together. Sprinkle half of the cinnamon sugar over the apples. Drizzle 1 tablespoon of melted butter over sugared apples. Bake 10 minutes. In a mixing bowl, whisk eggs, milk and 1 tablespoon melted butter. Add 1 cup Honey Apple Whole Grain Pancake Mix. Whisk until incorporated. Remove apples from oven and pour pancake batter over apples. Top with remaining cinnamon sugar. Sprinkle with pecans. Bake for 20-25 minutes or until done. Remove from oven. Drizzle with caramel sauce. Serve for breakfast or top with vanilla ice cream for dessert. Serves 4.
