Preheat oven to 350°F. Lightly grease 12 muffin cups. In a mixing bowl, add Caramel Apple Bread Mix, cornmeal, raisins, carrots and walnuts. Stir until blended. In a separate bowl, whisk eggs, orange juice and melted butter together. Add egg mixture to dry ingredients. Stir until incorporated. Fill muffin cups. Bake 22 minutes or until done. Cool in pan for 5 minutes. Cool completely on rack. Frost cupcakes. Serves 12.
Frosting: With electric mixer, blend cream cheese, butter, powdered sugar and vanilla until smooth.
