Fresh Mozzarella Tomato Basil Focaccia

Ingredients:
  • 1  bag LollipopTree® Organic Rosemary Garlic Bread Mix
  • 1  pound fresh ripe tomatoes, thinly sliced
  • 1  pound fresh mozzarella, thinly sliced (or 16 ounces grated mozzarella)
  • ½  cup  packed, fresh basil leaves, thinly sliced or torn
  • ¼  cup  extra virgin olive oil
  •   Freshly ground pepper
Directions:
Grease a large pizza pan or cookie sheet. Prepare Rosemary Garlic Bread Mix according to package directions for yeasted bread dough. On a floured surface, knead dough for 5 minutes. Roll dough into a 12 inch circle or a 10x15 inch rectangle. Place dough on prepared pan. Brush dough with 1 tablespoon olive oil and let rise 45 minutes at room temperature. Preheat oven to 425°F. Arrange tomatoes evenly on top of dough. Cover tomatoes with mozzarella. Sprinkle focaccia with fresh basil. Season with salt and pepper to taste. Drizzle with remaining olive oil. Bake for 20 to 25 minutes or until crust is golden brown. Serves 4.
